Assassins Creed 2
Lately my husband and I have been playing Assassins Creed...it is so much fun! And I'm not a gamer. Seriously. But I love watching him play this game! It's so intense lol. I know this makes me sound like such a dork but I'm telling you, it's so easy to get hooked on this game! On a more serious note, I'm waiting to here back about my interview with Holy Spirit Hospital. I'm praying that I will get this job but if this isn't what God wants me to be doing then I'm praying I'll be ok with that too :) Oh! Our good friends from church, just had their baby! I cannot wait to meet the little darling! And we haven't seen them in like a month so we're excited to have them back as well :) Alright this is my first year being married and having to do taxes...not cool! I have no idea what I'm doing, but thankfully Brett's mom is going to help us out. I am really hoping we get a return this year! My brother got 1500 bucks! 1500...ya crazy. That would be nice right about now lol

Ultimate Omlet
My husband came home hungry from work and I really wanted the leftover mac n cheese so he decided to make this ridiculous omlet!
Ingredients
4 eggs
1/4 c milk
1/4 c diced tomato
6 drops garlic hotsauce (opt)
1/4 c green pepper diced and sauteed
1/4 c minced sweet onion, sauteed
3 slices salami cut up (opt)
1/4 c cubed ham
6 slices pepperoni
1 green onion chopped
1 tsp paprika
1 tsp garlic powder
1/4 c shredded cheese
Directions
Combine eggs milk and hot sauce in cup or bowl. Whisk together until smooth. Start sauteing green onion, onion and pepper in seperate skillet before frying eggs. Put eggs in second skillet, then sprinkle paprika and garlic on eggs while cooking. Then add salami, ham and pepperoni. Once it's almost done add cheese so it can start to melt. Place tomatoes in bowl then top with eggs. The put the sauteed veggies over eggs. Salt and pepper to taste. He actually had some of the mac n cheese in there too but I wasn't gonna add that as an ingredient but if you want to it's pretty tasty

Best ever Mac n Cheese
So I'm a huge fan of homemade mac n cheese and my mom has a reallllly good recipe but this beats anything I've ever had! Oh and check out all my recipes on myrecipemagic.com

1- 12 oz can evaporated milk
1 1/2 c milk
1/4 c (1/2 stick) butter, melted and cooled to room temperature
3 large eggs
1/2 tsp salt
3 cups Italian blend cheese shredded
1/2 pound elbow macaroni, par cooked and drained (cook them for about 5 minutes until tender but not completely cooked)
Freshly ground black pepper to taste
1/2 c grated Parmesan cheese
1 tsp oregano
1 tsp basil
1 tsp parsley flakes
1 tsp garlic powder
1/4-1/2 c bread crumbs, sauteed
Directions
Spray the inside of the slow-cooker with spray. Combine milk, evaporated milk, eggs, butter, and salt in slow-cooker and whisk until smooth. Add the shredded cheese (not Parmesan) and macaroni, sprinkle with black pepper and seasonings. Stir gently with a spatula to coat evenly. Sprinkle the Parmesan cheese on top. Cover and cook on high for 30 minutes. After 30 minutes reduce temperature to low and cook for 2 to 2 1/2 hours, until custard is set in the center and the pasta is tender. You can keep mac n cheese in cooker on warm for 30 minutes before serving. Once dished up sprinkle the sauted bread crumbs on top of mac n cheese.
I pretty much make this once a week. Brett loves it! Cheese makes everything yummy

Valentines Day
I know I shouldn't be on the computer on Valentines Day, but Brett is fixing the car and I needed to get some things done at the library...none of which I can do because I forgot my pen and my recipe cards. Dumb! But oh well. But I did make us a cute little lunch! It was a heart shaped pizza =) So cute! And he brought me red roses, Reeses and Jolly Rancher lollipops! That man knows what I like lol. I got him sour gummy worms and Ghurka cigars :) He was pretty happy about that! Ok so here's my recipe for the heart shaped pizza for you fellow hopeless romantics!
Ingredients
1 cup warm water
1 pkg yeast
1 tsp salt
1 tsp sugar
1 tbs vegetable oil
2-3 cups flour
1-2 c pizza sauce
1-2 c shredded mozzarella cheese
20-25 slices pepperoni
4-5 slices bacon
1 tsp oregano
1 tsp basil
1 tsp garlic powder
1 tsp parsley flakes
1 tsp onion powder
Directions
Combine water and yeast in large mixing bowl. Add salt, sugar, oil and flour. Knead until dough is no longer sticky. Let rise for 20-30 minutes. While rising, fry the bacon. Once dough is done roll out and form a heart shaped pizza. Spread the sauce on then sprinkly the mozzarella cheese. Add pepperoni and bacon. Then sprinkly the seasonings over all. Bake for 15-20 minutes at 375
It's so yummy, and I baked mine on my Pampered Chef stone, but if you want it crispier...try putting oil on the crust and baking on a pizza crisper!
Tonight were going out for a nice dinner then were going to watch some cute romantic comedy..of course right! Maybe someday when were rich we'll do something cool like fly to Europe for the week? Or go to some cabin on the mountains :) Actually no that would probably freak me out lol. Europe will have to do! Alright well Happy Valentines Day everbody! xoxo

Men & Video Games
My husband, my cousin and a friend from church are all playing video games tonight...the one guy's wife is gone for a few weeks so they decided now would be a good time to play. Basically it's like watching a bunch of high school boys at an allnighter. Which hey if this is a way they can all release from a long hard work week then so be it. I really don't mind it at all but it does make me laugh. The giggling and yelling and laughing...yes I said giggling first. They really do giggle. Earlier...during dinner they were humming the tune to a nintendo 64 bond game lol. One of the men actually pulled it up on his phone and they were all listening (going back to the good ol days). So silly...I mean girls don't do stuff like this right? We don't go to each others houses and play with Barbie dolls? Not that I ever played with Barbie dolls when I was younger either but I'm sure some people did. I'm not dissing the guys at all though! I think it's great that they can all get together and have fun and yell at each other. Right now they're playing Madden..I'm not a huge fan of Madden. The one game I actually like (to watch) is Assassins Creed! Like truly..I like to watch Brett play it lol. I don't actually play the game though. I think tonight the guys are going to play Black Ops? or something that has to do with shooting everyone. Anyway us girls are going to have strawberry margaritas and do manis & pedis =) That sounds a whole lot more fun to me, but I guess most guys would think were ridiculous. But it works out nice for both sides :) Oh touchdown!...my hubby is winning!

Oven Roasted Potatoes...toppped with bacon!
Ok, so usually my favorite kind of potatoes are mashed....but these are delectable! And I just have to share this recipe with you. I know it's long but it's not hard to make at all, I promise! Just make sure you start this before your main course if your main course doesn't take very long to prepare :)
Ingredients
1 tbsp olive oil
1/2 lb hickory smoked bacon
5-6 baking potatoes
2 cloves garlic, minced
1/2 c sweet onion, chopped
1 green onion, minced
1/4 c Parmesan cheese
2 tsp coarse salt
2 tsp fresh ground peppers
1 tbs fresh parsley
1 tsp basil
1 tsp oregano
Directions
Peel potatoes then quarter or cube them (you can cube after they have been boiled also) and place in large pot. Fill pot with water until potatoes are covered by 2-3 inches of water. Bring water to a boil and cook for 12-15 minutes or until potatoes are just barely fork tender.
Meanwhile slice bacon strips in half then cut into 1/2 inch pieces.
Cook bacon in skillet until golden but still flexible. You don't want it crunchy. Remove cooked bacon onto a plate and reserve bacon drippings for later use.
Once potatoes are done, drain and allow to cool. While potatoes are cooling preheat oven to 425 and mince the garlic and parsley. Also grate Parmesan cheese.
Next prepare the baking sheet by brushing 1 tablespoon of olive oil and half the bacon drippings on the bottom of the pan. Once the potatoes are cool if not already cubed do so now.
Place the potatoes cut side down on prepared pan and sprinkle with course salt and fresh ground pepper.
Place in oven for 35-40 minutes. Rotate potatoes halfway through the baking time to ensure an even color.
Reduce temperature to 375 and turn potatoes over. Sprinkle with the bacon, garlic, onion, green onion and Parmesan cheese. Add more salt and pepper if desired. Return to oven for an additional 15-20 minutes or until potatoes are evenly browned and cheese is melted. Remove from oven and sprinkle with fresh parsley, basil and oregano.
And I made these yummy little treats for an appetizer- even better than the potatoes! Sweet Bacon Chicken- YUM

1 lb boneless skinless chicken, cubed
1/2 lb to 1 lb bacon
2/3 c. brown sugar
2 tbs. chili powder
2 tsp hot sauce
Directions
Cut chicken into 1 inch or so cubes. Then cute bacon strips into thirds. Wrap each piece of chicken with a piece of bacon. Combine brown sugar and chili powder then dredge chicken in the mix. and place in greased pan. Drizzle the hot sauce over the chicken then bake at 350 for 30-35 minutes or until bacon is crisp

Killer Yoga DVD
Today I did the Jillian Michaels yoga dvd, Oh My Goodness! It's killer! And it was only 30 minutes. Usually I do a more calm yoga dvd in the mornings but I might have to switch if I really want to get in shape. I will be so sore tomorrow, but I guess that means it's working. Now I just need to start eating a bit healthier. Last night was bad...but it was the superbowl so I'm not going to eat carrots and celery for goodness sakes. So instead I had wings, fries, ham and cheese pretzels bites, pop, and reeses dessert...FAT! Hey it's worth it. Brett had 21 wings! 21!! How nasty is that haha. I only had 4 wings and I felt disgusting. Yet somehow he doesn't get fat. Sigh...anyway. So I decided to embarrass myself and submit some of my pictures to the Nikon International Photo Contest lol. I take nice pictures but uh I'm pretty sure the judges are gonna be like "what the heck does this girl think she's gonna win?". But hey I have nothing to lose so why the heck not? Oh man I only have 10 minutes left on the library computer...let me tell ya- I cannot wait for the day when we have internet at the apartment! haha alright well enjoy the evening everybody!

Superbowl Sunday!!
Fact: I love football..and basketball but since it's Superbowl Sunday I'll talk about that. I'm a huge Browns' fan which is a tragedy I'll have you all know. We have never ever ever been to the Superbowl, since I I've been watching they have never been in the playoffs. Usually they don't even go 8-8. But I'm a devoted fan, my whole family loves the Browns so I guess I was cursed to begin with. So anyway, I have a second favorite team- the Patriots and I pretty much always assume that they'll be in the playoffs and I always hope they'll be in the Superbowl but I was pretty dissapointed this year that they weren't :( I'm cheering for the 49ers...I hate the Ravens ( no offense to you Baltimore fans) and I'm really not a big Lewis fan...no offense again. This is the first superbowl in a while I haven't watched with my family but today we're heading to my extended family's. Should be a real party...wings, chips, dips, pico de gallo, desserts! I'm super pumped about the wings...I love wings like Lebron James likes to dunk (not sure why I'm using him as an example, I can't stand Lebron James- I'm a Celtics fan!) Back to football. Actually I have nothing else to say, I don't really care about either of the teams but come on...it's the Superbowl! The big debate around here is whether or not Beyonce is going to lip sing like she did for the inauguration?? I could care less, her voice is amazing either way...and come on it's gotta be hard to dance and sing pretty right? Right. Ok, I gotta get the clothes out of the dryer and head on over to the party! Seeya!

Chicken Fajitas
So here's another recipe I tried that is scrumptious! (Hubby also loved- as you can see...he's pretty easy to please.) Ok, Oven Bakes Chicken Fajitas! These were wonderful, I also made my own tortillas because I forgot to buy them at the store..let me tell ya- home made ones are like 10 times better than store bought. Anyway here it is
Ingredients
1 pound boneless, skinless chicken breasts cut into strips
2 tbsp vegetable oil
2 tsp chili powder
2 tsp paprika
1/2 tsp garlic powder
1/2 tsp oregano
1/4 tsp salt
1 tomato cut up in chunks
1 4.5 oz can of Old El Paso Green Chilies
1 medium onion, sliced
1/2 green pepper, seeded and sliced
1/2 red pepper, seeded and sliced
12 tortillas
Toppings: cheese, sour cream, guacamole rice etc
Directions
Preheat oven to 400 degrees, place chicken strips in a greased 13x9 baking dish.
In a small bowl combine the oil, chili powder, paprika, garlic powder, oregano, and salt.
Drizzle the spice mix over the chicken and stir to coat.
Next add the tomatoes, chilies, peppers, and onions to the dish.
Bake uncovered for 20-25 minutes or until chicken is cooked through and veggies are tender.
Add toppings desired and enjoy
I don't like sour cream or guacamole but the cheese and rice...so yummy! It was more like a burrito at that point but who cares right?! Mexican food is amazing! My husband LOVES guacamole more than his life
(not really but he does like it alot!) This is also takes very little time to put together- so for you moms out there that have far more hectic lives than I do..this recipe is a real keeper- Unless of course your family doesn't like Mexican and if that's the case...just check out my other recipes lol

Ok so I made these super yummy, super easy meatball subs for dinner last night. My husband Loved it! He ate threeee of them all by himself! I was stuffed after 1! But since it only took me about 20 minutes to make I figured I might as well share this recipe as well!
Ingredients
Sub Rolls
Cooked meatballs (frozen or home-made)
Pasta sauce
Shredded Mozzarella Cheese
Onions
Basil
Oregano
Garlic Clove
Salt & Pepper
Directions
Spray a baking sheet with cooking spray. Preheat oven to 400 degrees.
Place frozen meatballs and pasta sauce in large pot, heat on medium low, stirring occasionally, until meatballs are heated through. Add Basil, Oregano, Garlic, Salt and Pepper to sauce for a boost of flavor.
Once meatballs are heated through fill a roll with as many meatballs as you can fit. Pour more of the pasta sauce on top of the meatballs then put onion on top. Place filled sub rolls closely on baking sheet then top each sandwich with mozzarella cheese.
Bake until cheese is melted and bubbly!
So just make these sometime for dinner and you'll know what I'm talking about! It's a nice alternative to the typical spaghetti and meatballs...which is good too but this is just delish!
Oh and side note...both of our cars broke down today...one right after the other. Talk about stressful! But they both needed new batteries...kind of expensive but Brett's parents bought one so that was a huge blessing! Anyway...that was my afternoon, crying because I didn't know what else to do lol. Such a baby I know. Women...if something like this happens to you- don't cry. Go help your husband...be useful. I will en devour to never do that again. Alright well go make some subs!
